Ingredients
1 lb boneless skinless chicken thighs
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
4 pita breads
1 cup tzatziki sauce
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 cup shredded lettuce
Instructions
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 30 minutes (or up to 4 hours in fridge).
Preheat grill or grill pan over medium-high heat. Cook chicken for 5-7 minutes per side until internal temperature reaches 165°F. Let rest 5 minutes, then slice into strips.
Warm pita breads on the grill or in a dry skillet for about 30 seconds per side.
Assemble gyros: spread tzatziki on each pita, top with chicken, tomatoes, onion, and lettuce. Fold and serve immediately.
Tips
For extra flavor, add a pinch of cumin or smoked paprika to the marinade.
