Ingredients
1 lb boneless skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 burger buns
4 leaves lettuce
4 slices tomato
1/4 cup mayonnaise
1 tbsp Dijon mustard
1 tsp lemon juice
Vegetable oil for frying
Instructions
Cut chicken breasts into 1/2-inch thick strips (goujons).
Set up a breading station: in a shallow bowl, mix flour with paprika, garlic powder, salt, and pepper. In another bowl, beat eggs. In a third bowl, place panko.
Dredge each chicken strip in seasoned flour, then dip in egg, then coat with panko, pressing gently to adhere.
Heat about 1/2 inch of oil in a large skillet over medium-high heat to 350°F (175°C).
Fry chicken goujons in batches, 2-3 minutes per side, until golden brown and cooked through (internal temp 165°F). Drain on paper towels.
In a small bowl, mix mayonnaise, Dijon mustard, and lemon juice to make the sauce.
Toast burger buns lightly. Spread sauce on both halves of each bun.
Assemble sandwiches: place lettuce and tomato on bottom bun, top with chicken goujons, then close with top bun.
Tips
For a lighter version, bake goujons at 425°F for 12-15 minutes, flipping halfway.
Leftover goujons can be reheated in an air fryer or oven to maintain crispiness.
