Ingredients
1 lb boneless skinless chicken breasts, cut into thin strips
1 cup buttermilk
1 cup all-purpose flour
1/2 cup panko breadcrumbs
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
vegetable oil for frying
Instructions
In a bowl, combine chicken strips with buttermilk. Cover and refrigerate for at least 30 minutes.
In a shallow dish, mix flour, panko, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
Remove chicken from buttermilk, allowing excess to drip off. Dredge each strip in the flour mixture, pressing lightly to adhere.
Heat about 1 inch of oil in a large skillet to 350°F (175°C).
Fry chicken strips in batches for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
Serve hot with your favorite dipping sauce.
Tips
For extra crunch, double-dip the chicken: buttermilk, flour mixture, buttermilk, flour mixture again.
Chicken fries can be baked at 400°F for 15-20 minutes for a lighter version.
