Ingredients
1 lb boneless skinless chicken breasts, cut into strips
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
2 large eggs
2 tbsp milk
1 1/2 cups panko breadcrumbs
Vegetable oil, for frying
1/4 cup honey
1/4 cup Dijon mustard
2 tbsp mayonnaise
1 tbsp lemon juice
Instructions
In a shallow dish, combine flour, salt, pepper, and paprika. In another dish, whisk eggs and milk. Place panko in a third dish.
Dredge each chicken strip in flour mixture, then dip in egg mixture, and finally coat with panko, pressing gently to adhere.
Heat about 1/2 inch oil in a large skillet over medium-high heat. Fry chicken strips in batches, turning once, until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
For the honey mustard: In a small bowl, whisk together honey, Dijon mustard, mayonnaise, and lemon juice until smooth.
Serve chicken fingers hot with honey mustard dipping sauce.
Tips
For extra crispy chicken, let the breaded strips rest for 5 minutes before frying.
You can bake the chicken fingers at 400°F for 15-20 minutes, flipping halfway, for a lighter version.
Store leftover honey mustard in the refrigerator for up to a week.
