Ingredients
4 boneless skinless chicken breasts (about 6 oz each)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (preferably panko)
2 tablespoons olive oil
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place each chicken breast between two pieces of plastic wrap and pound to an even thickness of about 1/4 inch.
In a small bowl, combine mozzarella, Parmesan, parsley, garlic powder, salt, and pepper.
Divide the cheese mixture among the chicken breasts, placing it in the center. Roll up each breast tightly, tucking in the sides. Secure with toothpicks if needed.
Set up a breading station: flour in one shallow dish, beaten eggs in another, and breadcrumbs in a third.
Coat each chicken roll first in flour, then dip in egg, and finally roll in breadcrumbs, pressing gently to adhere.
Place rolls seam-side down on the prepared baking sheet. Drizzle or brush with olive oil.
Bake for 20-25 minutes, until golden brown and chicken is cooked through (internal temperature reaches 165°F). Let rest 5 minutes before slicing.
