Ingredients
- 2 cups cooked, shredded chicken
- 1 cup sour cream
- 1 can (10 oz) enchilada sauce
- 2 cups shredded Monterey Jack cheese
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 6 (8-inch) flour tortillas
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
- In a bowl, mix shredded chicken, 1/2 cup sour cream, 1/2 cup enchilada sauce, 1 cup cheese, green onions, and cilantro. Season with salt and pepper.
- Spoon about 1/3 cup of the chicken mixture down the center of each tortilla. Roll up and place seam-side down in the prepared dish.
- In a small bowl, combine remaining 1/2 cup sour cream and remaining enchilada sauce. Pour over enchiladas.
- Sprinkle remaining 1 cup cheese on top.
- Bake for 20-25 minutes, until bubbly and cheese is melted. Let stand 5 minutes before serving.
