Ingredients
2 cups cooked, shredded chicken
8 corn tortillas
2 cups red enchilada sauce
2 cups shredded Mexican blend cheese
1/2 cup sour cream
1/2 cup chopped fresh cilantro
1 small onion, diced
2 cloves garlic, minced
1 tablespoon vegetable oil
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
In a skillet, heat oil over medium heat. Sauté onion and garlic until softened, about 3 minutes.
Add shredded chicken, 1/2 cup enchilada sauce, and 1/2 cup cheese. Stir until cheese melts. Remove from heat.
Warm tortillas in microwave for 30 seconds to make pliable.
Place a generous spoonful of chicken mixture down the center of each tortilla. Roll tightly and place seam-side down in a greased 9x13-inch baking dish.
Pour remaining enchilada sauce over the rolled tortillas. Sprinkle remaining cheese on top.
