Ingredients
8 chicken drumsticks (about 2 lbs)
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 tablespoons all-purpose flour
4 cups chicken broth
1 teaspoon dried thyme
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
2 cups frozen peas
2 tablespoons chopped fresh parsley (optional)
Instructions
Season drumsticks with salt and pepper. Heat oil in a large pot or Dutch oven over medium-high heat. Brown drumsticks in batches, about 5 minutes per side. Remove and set aside.
In the same pot, add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes. Sprinkle flour over vegetables and stir for 1 minute.
Slowly pour in chicken broth while stirring. Add thyme, bay leaf, salt, and pepper. Bring to a boil.
Return drumsticks to the pot. Reduce heat to low, cover, and simmer for 35-40 minutes until chicken is cooked through and tender.
Stir in frozen peas and cook for 5 minutes. Remove bay leaf. Garnish with parsley if desired.
Tips
For a thicker stew, mash some of the vegetables against the pot before adding peas.
Serve with crusty bread or over mashed potatoes.
