- 2 celery stalks, sliced

- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add chicken drumsticks, chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-35 minutes until chicken is cooked through and tender.
- Remove chicken drumsticks from the pot. When cool enough to handle, shred the meat off the bones, discarding bones.
- Return shredded chicken to the pot. Stir in parsley. Remove bay leaf. Adjust seasoning if needed.
