Ingredients
8 chicken drumsticks (about 2 lbs), skin removed
2 tablespoons vegetable oil
1 large onion, finely chopped
4 cloves garlic, minced
1 tablespoon ginger, grated
2 tomatoes, pureed
1 teaspoon cumin seeds
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon chili powder (adjust to taste)
Salt to taste
1/2 cup water
Fresh cilantro for garnish
Instructions
Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for 30 seconds.
Add chopped onion and sauté until golden brown, about 8 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Stir in tomato puree and cook for 5 minutes until the mixture thickens and oil separates.
Add ground coriander, ground cumin, turmeric, garam masala, chili powder, and salt. Cook for 2 minutes, stirring frequently.
Add chicken drumsticks and coat well with the spice mixture. Cook for 5 minutes, turning occasionally.
Pour in 1/2 cup water, bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until chicken is cooked through and tender.
Garnish with fresh cilantro and serve hot with rice or naan.
Tips
For extra richness, add 2 tablespoons of yogurt or cream at the end.
Adjust chili powder to your preferred spice level.
