Ingredients
8 chicken drumsticks (about 2 lbs)
2 tablespoons vegetable oil
2 large onions, finely chopped
4 cloves garlic, minced
1 inch ginger, grated
2 tomatoes, pureed
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons coriander powder
1 teaspoon garam masala
Salt to taste
1/2 cup water
Fresh cilantro for garnish
Instructions
Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
Add chopped onions and sauté until golden brown, about 8 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Add tomato puree, turmeric, red chili, coriander powder, and salt. Cook until oil separates, about 5 minutes.
Add chicken drumsticks and sear for 3-4 minutes, turning occasionally.
Pour in water, bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until chicken is cooked through and tender.
Sprinkle garam masala and mix well. Garnish with fresh cilantro.
Serve hot with rice or naan.

For a richer gravy, add 2 tablespoons of yogurt or cream at the end.
