Ingredients
8 chicken drumsticks (about 1.5 lbs)
2 tablespoons vegetable oil
1 large onion, finely chopped
2 teaspoons ginger-garlic paste
2 tomatoes, pureed
1 teaspoon cumin seeds
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 teaspoon salt (or to taste)
1/2 cup water
2 tablespoons fresh cilantro, chopped
Instructions
Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for 10 seconds.
Add chopped onion and sauté until golden brown, about 8 minutes.
Add ginger-garlic paste and cook for 1 minute until fragrant.
Add tomato puree, coriander, turmeric, chili powder, and salt. Cook stirring until oil separates, about 5 minutes.
Add chicken drumsticks and brown on all sides, about 5 minutes.
Pour in water, bring to a boil, then reduce heat to low. Cover and simmer for 25 minutes, stirring occasionally, until chicken is cooked through and tender.
Uncover, stir in garam masala, and cook for 2 more minutes. Garnish with cilantro and serve hot.
Tips
For a richer gravy, substitute water with coconut milk or cream.
Adjust chili powder to your preferred spice level.
