Ingredients
2 boneless, skinless chicken breasts (about 6 oz each)
Salt and black pepper to taste
1 tablespoon olive oil
6 slices bacon
4 slices sourdough bread
2 tablespoons mayonnaise
1 cup shredded lettuce
1 large tomato, sliced
4 slices cheddar cheese
Instructions
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through (internal temp 165°F). Let rest 5 minutes, then slice into strips.
In the same skillet, cook bacon until crispy. Drain on paper towels.
Toast bread slices until golden. Spread mayonnaise on one side of each slice.
Assemble sandwiches: layer lettuce, tomato slices, chicken strips, bacon, and cheese on two bread slices. Top with remaining bread slices, mayo-side down.
Cut sandwiches diagonally and serve immediately.
Tips
For extra flavor, add avocado slices or a drizzle of ranch dressing.
To make it a wrap, use large tortillas instead of bread.
