Ingredients
2 boneless skinless chicken breasts (about 1 lb)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
8 slices bacon
4 sub rolls (about 6 inches each)
4 tbsp mayonnaise
4 leaves lettuce
4 slices tomato
4 slices red onion
4 slices cheddar cheese (optional)
Instructions
Preheat oven to 400°F. Season chicken breasts with olive oil, salt, pepper, and garlic powder. Place on a baking sheet and bake for 15-20 minutes until cooked through (internal temp 165°F). Let rest 5 minutes, then slice into strips.
While chicken cooks, cook bacon in a skillet over medium heat until crispy. Drain on paper towels.
Slice sub rolls in half lengthwise. Spread 1 tablespoon mayonnaise on each roll half.
Layer lettuce, tomato slices, red onion, chicken strips, bacon, and cheese (if using) on the bottom half of each roll.
Place top half of roll on the sandwich. Serve immediately or wrap tightly for later.
