Ingredients
2 boneless, skinless chicken breasts (about 6 oz each)
Salt and black pepper to taste
1 tablespoon olive oil
6 slices bacon
6 slices white or whole wheat bread, toasted
3 tablespoons mayonnaise
4 leaves lettuce (iceberg or romaine)
1 medium tomato, sliced into 8 thin rounds
Instructions
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side, until golden brown and cooked through (internal temperature 165°F). Let rest for 5 minutes, then slice into thin strips.
In the same skillet, cook bacon until crispy. Drain on paper towels.
Spread about 1 tablespoon mayonnaise on one side of each bread slice.
Assemble the sandwich: On one slice of bread (mayo side up), layer half the lettuce, half the tomato slices, half the chicken strips, and half the bacon. Top with a second slice of bread (mayo side up). Repeat with remaining lettuce, tomato, chicken, and bacon. Place the third slice of bread on top (mayo side down).
Secure with toothpicks and cut the sandwich diagonally into halves or quarters. Serve immediately.
Tips
For extra flavor, add a slice of cheddar or Swiss cheese.
To keep the sandwich from getting soggy, toast the bread well and pat the tomato slices dry with a paper towel.
