Ingredients
2 boneless skinless chicken breasts (about 1 lb)
1 tablespoon soy sauce
1 teaspoon sesame oil
1/2 cup raw cashews
4 cups mixed salad greens
1 red bell pepper, thinly sliced
1/2 cup shredded carrots
1/4 cup chopped fresh cilantro
2 green onions, sliced
2 tablespoons rice vinegar
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1/4 cup vegetable oil
Instructions
Season chicken breasts with 1 tablespoon soy sauce and sesame oil. Heat a grill or skillet over medium-high heat and cook chicken for 5-6 minutes per side, until cooked through. Let rest for 5 minutes, then slice thinly.
In a small dry skillet over medium heat, toast cashews for 3-4 minutes until golden, stirring frequently. Set aside to cool.
In a large bowl, combine salad greens, bell pepper, carrots, cilantro, and green onions.
In a small bowl, whisk together rice vinegar, honey, 1 tablespoon soy sauce, ginger, and vegetable oil to make the dressing.
Add sliced chicken and toasted cashews to the salad. Pour dressing over and toss gently to combine.
Serve immediately.
