Ingredients
400g spaghetti
2 tbsp olive oil
300g chicken breast, sliced
150g pancetta or bacon, diced
3 cloves garlic, minced
4 large eggs
100g grated Parmesan cheese
1 tsp black pepper
1/2 tsp salt
2 tbsp chopped fresh parsley
Instructions
Bring a large pot of salted water to a boil. Cook spaghetti according to package directions until al dente. Reserve 1 cup pasta water, then drain.
While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken slices and cook until golden and cooked through, about 4-5 minutes per side. Remove and set aside.
In the same skillet, add pancetta and cook until crispy, about 3-4 minutes. Add garlic and cook for 30 seconds. Remove from heat.
In a bowl, whisk together eggs, Parmesan, black pepper, and salt.
Add the hot drained spaghetti to the skillet with pancetta. Toss quickly. Pour the egg mixture over the pasta, tossing vigorously. Add reserved pasta water a little at a time until the sauce is creamy and coats the pasta.
Slice the cooked chicken and add to the pasta. Toss to combine. Serve immediately, garnished with parsley.
