Ingredients
1 boneless, skinless chicken breast (about 6 oz)
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 ripe avocado
1 tbsp lime juice
2 tbsp mayonnaise
4 slices sourdough bread
4 leaves lettuce
4 slices tomato
Instructions
Season chicken breast with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 5-6 minutes per side until golden and cooked through (internal temp 165°F). Let rest 5 minutes, then slice thinly.
Halve avocado, remove pit, and scoop flesh into a bowl. Mash with a fork to desired consistency, then stir in lime juice and a pinch of salt.
Spread mayonnaise on one side of each bread slice. Divide mashed avocado among two slices (on the mayo side). Top with sliced chicken, lettuce, and tomato. Close with remaining bread slices (mayo side down).
Optional: Toast the assembled sandwich in a pan or press for 2-3 minutes per side until bread is golden and filling is warm.
Tips
For extra flavor, add a sprinkle of red pepper flakes or a drizzle of hot sauce.
If using leftover chicken, skip the cooking step and simply slice or shred the chicken.
Store leftover avocado mixture with plastic wrap pressed directly onto the surface to prevent browning.
