Ingredients
1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
2 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 red bell pepper, chopped
1 cup frozen peas
3 tbsp all-purpose flour
1.5 cups chicken broth
1 cup heavy cream
1 tsp dried thyme
1 tsp salt
0.5 tsp black pepper
1 cup shredded cheddar cheese
Instructions
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium-high heat. Add chicken cubes and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
In the same skillet, add onion and garlic; cook until softened, about 2 minutes. Add carrots, celery, and bell pepper; cook for 5 minutes.
Sprinkle flour over vegetables and stir to coat. Cook for 1 minute.
Gradually whisk in chicken broth and heavy cream. Add thyme, salt, and pepper. Bring to a simmer and cook until thickened, about 3 minutes.
Return chicken to the skillet and add frozen peas. Stir to combine.
Transfer mixture to a 9x13-inch baking dish. Sprinkle cheddar cheese evenly on top.
Bake for 25-30 minutes, until bubbly and cheese is golden.
Let rest for 5 minutes before serving.

For a lighter version, substitute half-and-half for heavy cream.
