Ingredients
2 large flour tortillas
1 cup cooked shredded chicken
1/2 teaspoon chili powder
1/4 teaspoon cumin
Salt and pepper to taste
1 cup shredded Mexican blend cheese
2 tablespoons chopped cilantro
1 tablespoon butter or oil
Instructions
In a small bowl, mix shredded chicken with chili powder, cumin, salt, and pepper.
Lay tortillas flat. Sprinkle half the cheese on one half of each tortilla. Top with seasoned chicken, cilantro, and remaining cheese. Fold tortillas in half.
Heat butter or oil in a skillet over medium heat. Place one quesadilla in the skillet and cook until golden brown, about 2-3 minutes per side. Repeat with the second quesadilla.
Cut into wedges and serve with salsa, sour cream, or guacamole.
Tips
For extra flavor, add sautéed onions and bell peppers.
