Ingredients
1 lb boneless skinless chicken breasts, sliced into thin strips
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp vegetable oil
3 cups broccoli florets
3 cloves garlic, minced
1 tbsp grated fresh ginger
1/4 cup chicken broth
1 tbsp oyster sauce
1 tsp sesame oil
1/4 tsp red pepper flakes (optional)
2 green onions, sliced
Instructions
In a bowl, toss chicken strips with 1 tbsp soy sauce and cornstarch until coated.
Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until golden and cooked through, about 4 minutes. Remove and set aside.
Add broccoli to the wok and stir-fry for 2 minutes. Add garlic and ginger; cook for 30 seconds until fragrant.
Return chicken to the wok. Add remaining 1 tbsp soy sauce, chicken broth, oyster sauce, sesame oil, and red pepper flakes. Stir-fry for 1-2 minutes until sauce thickens and coats everything.
Garnish with green onions and serve immediately over steamed rice.
Tips
For extra crunch, blanch broccoli in boiling water for 1 minute before stir-frying.
Substitute chicken with beef or tofu if desired.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
