Ingredients
1 lb boneless skinless chicken breasts, cut into 1/2-inch cubes
2 tbsp soy sauce
1 tbsp Shaoxing wine or dry sherry
1 tsp cornstarch
1/2 tsp white pepper
2 tbsp vegetable oil, divided
1/2 cup whole almonds, toasted
1/2 cup diced water chestnuts
1/2 cup diced bamboo shoots
1/2 cup diced red bell pepper
2 cloves garlic, minced
1 tsp grated fresh ginger
1/4 cup chicken broth
1 tbsp oyster sauce
1 tsp sesame oil
2 green onions, sliced
Instructions
In a bowl, combine chicken with 1 tbsp soy sauce, Shaoxing wine, cornstarch, and white pepper. Marinate 10 minutes.
Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until cooked through, about 4 minutes. Remove and set aside.
Add remaining 1 tbsp oil to wok. Add almonds, water chestnuts, bamboo shoots, and bell pepper. Stir-fry 2 minutes.
Add garlic and ginger; stir-fry 30 seconds until fragrant.
Return chicken to wok. Add chicken broth, remaining 1 tbsp soy sauce, and oyster sauce. Stir-fry 1 minute until sauce thickens slightly.
Drizzle with sesame oil, toss in green onions, and serve immediately.
Tips
Serve over steamed rice or noodles.
Substitute cashews or peanuts for almonds if desired.
For extra heat, add a pinch of red pepper flakes with the garlic.
