Bring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente. Drain and set aside.
While pasta cooks, season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook chicken for 5-7 minutes per side until golden and cooked through (internal temp 165°F). Remove chicken and let rest for 5 minutes, then slice into strips.
