  3. Make the filling: In a large bowl, combine cherries, 3/4 cup sugar, cornstarch, lemon juice, and almond extract. Toss gently to coat. Let stand for 15 minutes.
  4. Roll out one dough disk on a floured surface to a 12-inch circle. Transfer to a 9-inch pie plate, letting excess hang over edge. Pour in cherry filling and dot with 1 tablespoon butter pieces.
  5. Roll out second dough disk to a 12-inch circle. Cut into 1-inch strips for lattice top, or place whole and cut slits for vents. Arrange lattice or top crust over filling. Trim and crimp edges. Brush with beaten egg and sprinkle with coarse sugar.
