4 cups fresh or frozen pitted cherries

1 tablespoon lemon juice

1/2 cup rolled oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon

1/2 cup cold unsalted butter, cut into small cubes
Instructions
Preheat oven to 375°F (190°C).
In a large bowl, combine cherries, granulated sugar, cornstarch, lemon juice, and vanilla. Toss to coat. Transfer to an 8x8-inch baking dish.
In another bowl, whisk together flour, oats, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
Sprinkle crumble topping evenly over cherry mixture.
Bake for 35-40 minutes, until filling is bubbly and topping is golden brown. Let cool for 10 minutes before serving.
