  2. Cook spaghetti according to package directions until al dente. Drain and set aside.
  3. In a large skillet, melt butter over medium heat. Add mushrooms and onion; cook until mushrooms are golden and onion is soft, about 5-7 minutes. Add garlic and cook 1 minute more.
  4. Sprinkle flour over the mushroom mixture and stir constantly for 1-2 minutes until well combined.
  5. Gradually whisk in chicken broth, milk, and wine (if using). Bring to a simmer, stirring constantly, until sauce thickens, about 3-4 minutes.
  6. Remove from heat. Stir in peas, turkey, Parmesan cheese, and 1 cup of mozzarella cheese. Season with salt and pepper to taste.
  7. Add cooked spaghetti to the sauce and toss to coat evenly. Transfer mixture to prepared baking dish and top with remaining 1/2 cup mozzarella cheese.
  8. Bake for 20-25 minutes until bubbly and golden on top. Let rest for 5 minutes, then garnish with parsley before serving.
