Ingredients
- 2 packs instant ramen noodles (discard seasoning packets)
- 1 tablespoon butter
- 1/2 onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup tomato puree or crushed tomatoes
- 2 cups water or chicken broth
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 green onions, sliced for garnish
Instructions
- Melt butter in a medium pot over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for 30 seconds.
- Stir in tomato puree, water or broth, sugar, salt, and pepper. Bring to a boil.
- Add ramen noodles (discard seasoning). Cook for 2 minutes, stirring occasionally to separate noodles.
- Reduce heat to low. Sprinkle mozzarella and Parmesan over the noodles. Stir until melted and creamy.
- Divide into bowls and garnish with green onions. Serve hot.
Tips
- Use low-sodium broth to control saltiness.
- For extra protein, add a soft-boiled egg or cooked chicken.
- Leftovers can be refrigerated but noodles may absorb liquid; add a splash of water when reheating.
