Ingredients
1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
4 cups beef broth
2 cups peeled and diced potatoes
1 cup shredded carrots
1/2 cup chopped pickles
2 tbsp ketchup
1 tbsp yellow mustard
1 tsp Worcestershire sauce
2 cups shredded cheddar cheese
1 cup milk
2 tbsp all-purpose flour
2 tbsp butter

Instructions
In a large pot over medium-high heat, cook ground beef until browned, breaking it apart. Drain excess fat.
Add onion and garlic to the pot; cook until softened, about 3 minutes.
Stir in beef broth, potatoes, carrots, pickles, ketchup, mustard, and Worcestershire sauce. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Cook, stirring, until thickened, about 2 minutes.
Reduce soup heat to low. Stir in the milk mixture and shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
Ladle into bowls and serve hot, garnished with additional shredded cheese or chopped pickles if desired.

For a lighter version, use ground turkey and reduced-fat cheese.
