Ingredients
1 lb ribeye steak, thinly sliced
2 tablespoons vegetable oil
1 large onion, thinly sliced
1 green bell pepper, thinly sliced
4 slices provolone cheese
4 hoagie rolls, split
Salt and black pepper to taste
Instructions
Heat 1 tablespoon oil in a large skillet over medium-high heat. Add steak slices in a single layer; season with salt and pepper. Cook until browned, about 2 minutes per side. Transfer to a plate.
Reduce heat to medium. Add remaining 1 tablespoon oil, onion, and bell pepper. Cook, stirring occasionally, until softened and lightly caramelized, about 8 minutes.
Return steak to the skillet with the onions and peppers. Toss to combine and heat through.
Divide the steak mixture evenly among the hoagie rolls. Top each with a slice of provolone cheese.
Place sandwiches on a baking sheet and broil until cheese is melted and bubbly, about 2 minutes. Serve immediately.
Tips
For authentic flavor, use thinly sliced ribeye or top round.
Freeze the steak for 30 minutes before slicing to make it easier to cut thin.
