Ingredients
2 large flour tortillas (10-inch)
1 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
1 tablespoon unsalted butter
Instructions
In a medium bowl, combine Monterey Jack and cheddar cheeses.
Heat a large non-stick skillet over medium heat. Add 1/2 tablespoon butter and let melt.
Place one tortilla in the skillet. Sprinkle cheese mixture evenly over the tortilla, leaving a small border.
Top with the second tortilla. Cook until bottom is golden brown, about 3 minutes.
Carefully flip the quesadilla using a spatula. Add remaining butter to skillet and cook until second side is golden brown and cheese is melted, about 3 minutes.
Transfer to a cutting board. Let cool for 1 minute, then cut into wedges. Serve immediately.
Tips
For extra flavor, add cooked chicken, black beans, or sautéed peppers before adding the top tortilla.
Serve with salsa, sour cream, or guacamole.
To keep warm, place in a 200°F oven while making additional quesadillas.
