Ingredients
2 large eggs
1 tablespoon unsalted butter
1/4 cup shredded cheddar or Gruyère cheese
Salt and freshly ground black pepper to taste
1 tablespoon milk or water (optional)
Instructions
Crack the eggs into a bowl, add a pinch of salt and pepper, and the milk or water if using. Beat with a fork until well combined and slightly frothy.
Heat a non-stick skillet over medium-high heat and add the butter. Swirl to coat the pan. When the butter is melted and foamy but not browned, pour in the eggs.
Let the eggs set for a few seconds, then use a spatula to gently push the cooked edges toward the center, tilting the pan to allow uncooked egg to flow to the edges. Repeat until the eggs are mostly set but still slightly runny on top.
Sprinkle the cheese evenly over one half of the omelette. Fold the other half over the cheese. Cook for another 30 seconds, then slide onto a plate. Serve immediately.
Tips
For a fluffier omelette, add a splash of milk or water to the eggs.
Use a non-stick pan for easiest release.
