Ingredients
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
3/4 cup warm water
2 tablespoons olive oil
1 cup shredded mozzarella cheese
1/4 cup chopped fresh cilantro (optional)
Butter or ghee for brushing
Instructions
In a large bowl, mix flour, salt, and baking powder. Add warm water and olive oil, then knead into a smooth dough. Cover and rest for 10 minutes.
Divide dough into 4 equal balls. On a floured surface, roll each ball into a 6-inch circle.
Place 1/4 cup of shredded cheese (and cilantro if using) on one half of each circle, leaving a small border. Fold the other half over to form a half-moon, pressing edges to seal.
Roll each stuffed flatbread gently to about 1/4-inch thickness.
Heat a skillet or tawa over medium-high heat. Cook each flatbread for 2-3 minutes per side until golden brown and cheese is melted.
Brush with butter or ghee and serve hot.
Tips
For extra flavor, add minced garlic or chili flakes to the dough.
