Ingredients
4 large eggs
2 tablespoons milk
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons unsalted butter
1/2 cup diced cooked ham
1/2 cup shredded cheddar cheese
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a non-stick skillet over medium heat. Add ham and cook, stirring occasionally, for 1-2 minutes until lightly browned.
Pour egg mixture into the skillet. Let cook without stirring for about 30 seconds until edges begin to set.
Using a spatula, gently push cooked eggs from edges toward center, tilting pan to allow uncooked eggs to flow to edges. Repeat until eggs are mostly set but still soft.
Sprinkle cheese over the eggs and remove from heat. Gently fold until cheese is melted and eggs are creamy. Serve immediately.
Tips
For extra creaminess, use whole milk or add a tablespoon of cream cheese.
Serve with toast or fresh fruit for a complete meal.
