  2. Add the remaining 3 cups milk, piloncillo, Mexican chocolate, cinnamon stick, and salt. Whisk to combine.
  3. Place over medium heat and cook, stirring frequently with a whisk or wooden spoon, until the mixture thickens and comes to a gentle simmer, about 10-15 minutes.
  4. Reduce heat to low and continue to cook, stirring often, for another 5 minutes until the chocolate and piloncillo are fully dissolved and the champurrado is thick and creamy.
  5. Remove from heat. Discard the cinnamon stick. Stir in the vanilla extract.
  6. Whisk vigorously until frothy, or use a molinillo (traditional wooden whisk) if available. Serve hot in mugs.
