Ingredients
4 (6-inch) corn tortillas
1/2 cup refried beans
1/2 lb ground beef
1/2 tsp chili powder
1/2 tsp ground cumin
1/4 tsp garlic powder
1/4 tsp onion powder
Salt to taste
1/2 cup shredded lettuce
1/2 cup diced tomatoes
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup salsa
Vegetable oil for frying
Instructions
In a skillet over medium heat, cook ground beef until browned. Drain excess fat. Add chili powder, cumin, garlic powder, onion powder, and salt. Stir and cook for 1 minute. Set aside.
Heat about 1/2 inch of vegetable oil in a small skillet over medium-high heat. Fry each corn tortilla for about 30 seconds per side until golden and slightly puffed. Drain on paper towels.
Spread about 2 tablespoons of refried beans onto each fried tortilla.
Top with seasoned ground beef, then shredded lettuce, diced tomatoes, and shredded cheese.
Add a dollop of sour cream and salsa on top. Serve immediately.
Tips
For a crispier shell, fry tortillas until they are lightly golden but still pliable.
You can substitute ground chicken or turkey for a lighter version.
