Ingredients
2 cups water
2 teaspoons loose black tea (or 2 tea bags)
2 slices fresh ginger (about 1/4 inch thick)
4 green cardamom pods, lightly crushed
2 whole cloves
1 small cinnamon stick (about 1 inch)
2 black peppercorns
1 cup whole milk
2 tablespoons sugar, or to taste
Instructions
In a small saucepan, combine water, ginger, cardamom, cloves, cinnamon, and peppercorns. Bring to a boil over high heat.
Reduce heat to low, cover, and simmer for 5 minutes to infuse the spices.
Add the black tea, stir, and simmer uncovered for 2 minutes.
Pour in the milk and sugar. Increase heat to medium and bring to a gentle boil.
Let it boil for 2-3 minutes, allowing the chai to froth up. Watch closely to prevent boiling over.
Remove from heat. Strain the chai through a fine-mesh sieve into cups. Serve hot.
Tips
For a stronger chai, simmer the spices longer or add an extra tea bag.
Adjust sweetness to your preference; traditional chai is quite sweet.
Use full-fat milk for a creamier texture, or substitute with your preferred milk.
Chai can be made in larger batches and refrigerated; reheat gently before serving.
