Ingredients
1 cup water
1 inch fresh ginger, sliced
4 green cardamom pods, lightly crushed
2 whole cloves
1 small cinnamon stick
1 black peppercorn
1 teaspoon loose black tea leaves (or 1 tea bag)
1/2 cup milk (any kind)
1 to 2 teaspoons sugar, or to taste
Instructions
In a small saucepan, combine water, ginger, cardamom, cloves, cinnamon, and peppercorn. Bring to a boil over medium-high heat.
Reduce heat to low, cover, and simmer for 5 minutes to infuse the spices.
Add the black tea leaves, stir, and simmer for another 2-3 minutes, depending on desired strength.
Pour in the milk and sugar, and bring to a gentle boil. Watch carefully to prevent boiling over.
Remove from heat and strain the chai into a mug through a fine-mesh sieve. Serve hot.
Tips
For a frothy latte, whisk the chai vigorously after adding milk or use a milk frother.
Adjust sweetness and spice levels to your preference.
Store leftover chai concentrate (without milk) in the fridge for up to 3 days and reheat with milk when ready to serve.
