Ingredients
2 cups rolled oats
1 cup crispy rice cereal
1/2 cup chopped almonds
1/4 cup sunflower seeds
1/2 cup dried cranberries
1/2 cup honey
1/4 cup creamy peanut butter
1/4 cup coconut oil
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
Spread oats, almonds, and sunflower seeds on a baking sheet. Toast in the oven for 8-10 minutes until lightly golden. Transfer to a large bowl and add crispy rice cereal and dried cranberries.
In a small saucepan over medium heat, combine honey, peanut butter, coconut oil, vanilla, and salt. Stir until melted and smooth, about 2-3 minutes.
Pour the honey mixture over the dry ingredients and stir until everything is well coated.
Transfer the mixture to the prepared pan. Press firmly and evenly into the pan using a spatula or the bottom of a glass.
Bake for 12-15 minutes until golden brown around the edges. Let cool completely in the pan on a wire rack (about 1 hour).
Once cool, lift out using the parchment overhang and cut into 12 bars.
Tips
Store bars in an airtight container at room temperature for up to a week, or freeze for up to 3 months.
For a nut-free version, replace almonds with pumpkin seeds and use sun butter instead of peanut butter.
Press the mixture very firmly to prevent the bars from crumbling.
