Ingredients
2 cups crispy rice cereal
1 cup rolled oats
1/2 cup honey
1/2 cup creamy peanut butter
1/4 cup brown sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup mini chocolate chips
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a large bowl, combine crispy rice cereal and rolled oats.
In a small saucepan over medium heat, combine honey, peanut butter, brown sugar, vanilla extract, and salt. Stir until smooth and melted, about 2-3 minutes.
Pour the peanut butter mixture over the dry ingredients and stir until well coated.
Fold in mini chocolate chips.
Transfer the mixture to the prepared dish and press firmly into an even layer using a spatula or your hands.
Refrigerate for at least 1 hour until firm.
Lift out using the parchment overhang and cut into 12 bars.
