Ingredients
1 large head cauliflower (about 2 lbs), cut into florets
3 cloves garlic, peeled
3 tablespoons unsalted butter
1/4 cup heavy cream or milk
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
2 tablespoons chopped fresh chives or parsley (optional)
Instructions
Place cauliflower florets and garlic cloves in a large pot and cover with water. Bring to a boil over high heat, then reduce to medium and cook until cauliflower is very tender, about 12-15 minutes.
Drain well and return to the pot. Cook over low heat for 1-2 minutes, stirring, to evaporate excess moisture.
Transfer cauliflower and garlic to a food processor or blender. Add butter, cream, salt, and pepper. Puree until smooth and creamy, scraping down sides as needed.
Taste and adjust seasoning. Stir in chives or parsley if using. Serve warm.
Tips
For a dairy-free version, substitute olive oil and unsweetened almond milk.
To make ahead, prepare mash and reheat gently with a splash of milk.
