- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup chicken broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper (or to taste)
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 bay leaf
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Season catfish chunks with salt and pepper. Set aside.
- Heat oil in a large pot or Dutch oven over medium heat. Add onion, bell pepper, and celery; cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in diced tomatoes, chicken broth, paprika, cayenne, thyme, oregano, and bay leaf. Bring to a simmer.
- Gently add catfish chunks to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes until fish is cooked through and flakes easily.
- Remove bay leaf. Taste and adjust seasoning with salt and pepper. Garnish with parsley before serving.
