Ingredients
2 cups raw cashews
1/2 teaspoon salt

Instructions
Preheat oven to 350°F (175°C). Spread cashews on a baking sheet in a single layer.
Roast for 8-10 minutes, stirring halfway, until golden and fragrant. Let cool for 5 minutes.
Transfer cashews to a food processor. Process for 1 minute, then scrape down sides.
Continue processing for 5-8 minutes, scraping as needed, until smooth and creamy. Add salt and oil if desired, then blend briefly.
