Ingredients
2 tablespoons vegetable oil
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
2 cloves garlic, minced
2 cups cooked black beans (with some liquid)
2 cups cooked white rice
1 teaspoon ground cumin
Salt to taste
Fresh cilantro for garnish (optional)
Instructions
Heat oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened, about 3 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in black beans with their liquid, rice, cumin, and salt. Mix well to combine.
Cook, stirring occasionally, until heated through and flavors meld, about 5-7 minutes. If too dry, add a splash of water or bean liquid.
Taste and adjust seasoning. Serve hot, garnished with fresh cilantro if desired.
Tips
For extra flavor, add a dash of Worcestershire sauce or achiote paste.
Leftover casamiento can be refrigerated for up to 3 days; reheat in a skillet.
