1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 pound carrots, peeled and sliced
1 medium potato, peeled and diced
4 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream (optional)
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in carrots, potato, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
