Ingredients

- 1 green chili, slit (optional)

- 1/2 teaspoon garam masala

- 4 medium carrots, peeled and diced (about 2 cups)
- 1 cup frozen peas
- 1/2 cup water
- 2 tablespoons chopped fresh cilantro for garnish
Instructions
- Heat oil in a large skillet or pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onion and sauté until golden brown, about 5-7 minutes.
- Add garlic, ginger, and green chili (if using). Cook for 1 minute until fragrant.
- Add ground coriander, turmeric, garam masala, red chili powder, and salt. Stir well and cook for 30 seconds.
- Add diced carrots and frozen peas. Stir to coat with spices.
- Pour in water, bring to a simmer, then cover and cook for 10-12 minutes until carrots are tender but not mushy.
- Uncover and cook for another 2-3 minutes to thicken the sauce if needed. Adjust seasoning.
- Garnish with fresh cilantro and serve hot with rice or naan.
