Ingredients
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup vegetable oil
2 large eggs
1/2 cup plain yogurt
1/4 cup milk
1 1/2 cups grated carrots (about 2 medium carrots)
1/2 cup chopped fresh coriander (cilantro)
1/4 cup finely chopped onion
Instructions
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and pepper.
In another bowl, beat oil and eggs until combined. Stir in yogurt and milk.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in grated carrots, coriander, and onion until evenly distributed.
Pour batter into prepared loaf pan and smooth the top.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

Slice and serve warm or at room temperature with butter or cream cheese.
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
