Ingredients
1 lb flank or skirt steak
1/4 cup olive oil
1/4 cup fresh lime juice
3 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1 tsp salt
1/2 tsp black pepper
1 cup cooked white rice
1 cup canned black beans, drained and rinsed
4 large flour tortillas (10-inch)
1/2 cup sour cream
1/2 cup pico de gallo or salsa
1 avocado, sliced
1/2 cup shredded Monterey Jack cheese
Instructions
In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper. Add steak and marinate for at least 15 minutes (or up to 2 hours in fridge).
Grill steak over high heat for 4-5 minutes per side for medium-rare, or to desired doneness. Let rest 5 minutes, then slice against the grain into thin strips.
Warm tortillas on a dry skillet or directly over a gas flame for about 30 seconds per side until pliable.
Lay each tortilla flat. Spread 1 tablespoon sour cream down the center, then layer with 1/4 cup rice, 1/4 cup black beans, sliced steak, pico de gallo, avocado slices, and cheese.
Fold in the sides of the tortilla, then roll tightly from the bottom to form a burrito. Repeat with remaining ingredients.
Optional: Heat a skillet over medium heat and toast the burritos seam-side down for 2-3 minutes until golden and sealed.
Tips
Serve with extra salsa and sour cream on the side.
For a lighter version, use whole wheat tortillas and omit cheese.
Leftover burritos can be wrapped in foil and reheated in a 350°F oven for 15 minutes.
