Ingredients
2 cups ripe papaya, peeled, seeded, and finely chopped
1 cup granulated sugar
2 tablespoons fresh lime juice
1 teaspoon lime zest
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
Instructions
In a medium saucepan, combine the chopped papaya, sugar, lime juice, lime zest, cinnamon, nutmeg, ginger, and salt. Stir well.
Bring the mixture to a boil over medium-high heat, stirring frequently to dissolve the sugar.
Reduce heat to medium-low and simmer, stirring occasionally, for about 30-40 minutes, or until the jam thickens and reaches a gel-like consistency (about 220°F on a candy thermometer).
Remove from heat and let cool slightly. Skim off any foam if desired.
Ladle the hot jam into clean, sterilized jars, leaving 1/4-inch headspace. Wipe rims, seal with lids, and process in a boiling water bath for 10 minutes for long-term storage, or refrigerate for up to 3 weeks.
Tips
For a smoother jam, mash the papaya with a potato masher before cooking.
To test if jam is set, place a small spoonful on a cold plate; if it wrinkles when pushed, it's ready.
