Ingredients
3 ripe but firm pears, peeled, cored, and sliced into 1/4-inch wedges
1/2 cup unsalted butter, melted
3/4 cup packed light brown sugar
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
Instructions
Preheat oven to 350°F (175°C). In a 9-inch round cake pan, combine melted butter and brown sugar; spread evenly. Arrange pear slices in a circular pattern over the sugar mixture.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla.
Gradually add flour mixture to butter mixture, alternating with buttermilk, beginning and ending with flour. Mix until just combined.
Carefully spoon batter over pears and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into center comes out clean.
Let cake cool in pan for 10 minutes. Run a knife around edges, then invert onto a serving plate. Serve warm or at room temperature.
Tips
Use ripe but firm pears so they hold their shape during baking.
Let the cake rest in the pan for exactly 10 minutes before inverting to prevent sticking.
Store leftovers covered at room temperature for up to 2 days.
