Ingredients
10 cups popped popcorn (about 1/2 cup kernels)
1 cup unsalted butter
2 cups packed brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Instructions
Preheat oven to 250°F (120°C). Line two large baking sheets with parchment paper or silicone mats. Spread popcorn evenly on the sheets.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 4 minutes.
Remove from heat and stir in baking soda and vanilla (mixture will foam). Immediately pour over popcorn and stir gently with a rubber spatula to coat evenly.
Bake for 1 hour, stirring every 15 minutes. Remove from oven and let cool completely on baking sheets. Break into clusters. Store in an airtight container.
